Encanto Bar & Grill located at Dorado Beach, a Ritz-Carlton Reserve presents its new menu based on fresh grilled seafood that incorporates Puerto Rican ingredients. The masterminds behind the innovative concept are Chef Antonio Domingo, former sous-chef of Mi Casa by José Andrés, and Christian Clair, Executive Chef of the hotel. From the new menu, the following dishes stand out: the Seafood Mamposteao, the Roasted Chicken Stuffed with Barley and Fresh Herbs in a Red Wine Sauce, and Mai Mahi filet breaded with Achiote.
Other exquisite dishes featured on the new menu include slow cooked octopus and pork belly served over a pigeon peas stew, which promise a divine dining experience overlooking the ocean.
